The Perfect Chocolate Covered Strawberries

The absolute best chocolate dipped strawberry you will ever experience :-)

Ingredients
  

  • 1 container usually one pound of ripe Organic Strawberries. The biggest and best berries you can find. Ensure that the entire berry is red, without white around the leaves. This makes all the difference! Strawberries are part of the "dirty dozen" so always buy organic if you can.
  • 1.5 cup milk chocolate chips Ghiradelli or Guittard brand chips - yes, the chocolate brand really does matter!
  • 1/2 cup semi-sweet chocolate chips Ghiradelli or Guittard brands - still matters, LOL!. I prefer milk chocolate but like a combination of the two on my chocolate covered strawberries.
  • 1 pat of grass fed butter I use Kerrygold.

Instructions
 

  • Add about two inches of hot water to the pot of a double boiler and put on medium hot stove. I use a stainless steel bowl over a regular pot instead of an actual double boiler.
  • Line your serving platter with parchment or wax paper and cut to fit.
  • Add all chocolate chips to top of double boiler and let melt.
  • Once chips start melting, add pat of butter and stir. The butter adds a silky glossiness to the chocolate and makes a big difference so don't skip it :-)
  • Using a fork or whisk, stir the chocolate until all of the chips just about melted.
  • Once chocolate is 90% melted, remove from hot burner. We don't want to burn the chocolate.
  • Ensure that your berries are COMPLETELY dry (secret tip - I don't wash mine!) because if even one drop of water gets into your melted chocolate, it will clump. Trust me. Been there, done that!
  • Hold your strawberry from the leaf crown with your fingertips and gently submerge into the chocolate. The chocolate should be thick and stick to the strawberry easily. Swirl your berry around gently in the chocolate to ensure it is coated on all sides, leaving a small bit of the ripe berry visible.
  • Once the strawberry is properly coated with chocolate, lay it gently on your lined serving dish. Once it's placed, don't move it. It'll make a mess and it's not worth it, LOL!
  • Continue to dip each strawberry until all are covered in chocolate and arranged on your platter.
  • Let the chocolate covered strawberries sit on your counter to set for about an hour or so. Do not refrigerate! If you put strawberries into the fridge after they're dipped in chocolate, the berry gets mushy and weird and the chocolate gets so hard it cracks when you bite it. No one wants a cracky chocolate covered strawberry, LOL! We want a luscious and delicious perfect chocolate covered strawberry. So don't put them in the fridge! THIS, my friends, is the real secret :-)
